ELLA JONES COLORADO STRAIGHT BOURBON WHISKEY

IN THE DISTILLER’S WORDS:

When blending a batch of Ella Jones, our team of distillers taste through every straight bourbon barrel in our warehouse. Some barrels feature the sweet toasty notes from Colorado grown corn and charred oak barrels. Others highlight the spiciness of heirloom rye and a crisp finish that comes from aging at high altitude. Finally, we find barrels that feature fruity and floral notes that derive from long fermentations and double pot distillation. We carefully select our favorite barrels and blend them to create a beautifully balanced spirit that celebrates Colorado's unique climate. 

This is Ella Jones, a Colorado Straight Bourbon Whiskey aged for an average of four years.

 

TASTE: 

  • Bruléed vanilla sugar, toasted sweet corn, dark cherry, and light smoke.

MASHBILL:

  • 75% corn.  Of the Corn, 5% was grown in Burlington by The Whiskey Sisters, 31% is organic from Colorado Stock and grain in Johnstown, and 64% is from Root Shoot Malting/Olander Farms

  • 15% Rye.  Of the Rye, 4% is Elbon variety grown by Whiskey Sisters in Burlington,  91% is Elbon variety from Olander Farms in Loveland, and 5% is Bono variety from Root Shoot.

  • 10% Malt. 95% of the malt is Metcalf 2 row from Root Shoot Malting and the other 5% is light Munich malt also from Root Shoot Malting .

  • Looking at total grains, 4% came from Whiskey Sisters in Burlington, 23% from Colorado Stock and Grain in Johnstown and 72% from Root Shoot Malting / Olander Farms.

  • WATER All water used in the blending process is Eldorado Springs Spring water.

  • BARREL #3 charred American White Oak, 53 gallon

  • PROOF 94 (47% ABV)
